SHEPHERD SALAD

Guadalupe

Ingredients: for 4 people

For the shepherd's meat

  • 8 Pork steaks

  • 30 g achiote paste

  • 1 Roasted garlic clove

  • ¼ roasted onions

  • 2 Fat peppers

  • 1 Clove

  • 1 teaspoon of cumin

  • ½ cup of orange juice

  • ¼ of cup of apple cider vinegar

  • 1 tablespoon of oil



For the dressing

  • 1 tablespoon of chipotle pulp

  • The juice of 1 lemon

  • 1 tablespoon of honey

  • 1 cup of red onion filleted

  • 1 ½ cups of corn tortillas in julienne, fried


Procedure:


To Pastor meat:

1.- First you must blend the achiote paste, garlic, onions, peppers, cloves, cumin, orange juice and vinegar.

2.- Then salt pepper and pour over a bowl with the pork steaks.

3.- Finally, marinate for 40 minutes.


For the dressing:

1.- Mix all the ingredients and salt and pepper.


For the salad:

1.- First you must heat the oil and cook the steaks on both sides until they are cooked. Then cut into cubes and reserve.

2.- Then place the lettuce, pineapple, onion, meat and julienne in a bowl.

3.- Pour the dressing and serve. If you want you can add more dressing.
